SUGAR FREE CRANBERRY SAUCE



Cranberry sauce is a wonderful accompaniment to your Christmas turkey.

You can of course buy it from any supermarket, but honestly cranberry sauce is SO easy to make you never need to buy it. Also shop bought varieties are often have high content of sugar or sugar substitutes, therefore I created my own sugar free version.

Ingredients

250g pack fresh cranberries

Juice and finely grated zest of 1 orange or 100mls fresh orange juice

2 desert apples, cored and chopped (Pink Lady, Royal Gala, Kanzi, Jazz etc)

1 cinnamon stick

3-4 tablespoons port (optional)

Method

Place the apples, cinnamon, orange juice and zest of the orange into a pan.

Cover with a lid and cook on a low heat for 15-20 minutes or until apples have softened.

Add cranberries and simmer gently for 10 minutes until the cranberries have softened and started to burst.

Add port (if using), stir and simmer for a further 5-7 minutes until the sauce has thickened. Transfer the sauce to a sterilised jar.

Tip

You can make this sauce up to a week in advance, cool and keep it in the fridge.
