2 ripe avocados, peeled, stone removed

6 ripe cherry tomatoes, roughly chopped

2 spring onions, peeled and finely chopped

2 garlic gloves, peeled and minced

Handful of fresh coriander, stalks removed, leaves roughly chopped

Juice of one lime

3 tbsp extra virgin olive oil

1 red chilli, deseeded and finely chopped

Sea salt and ground black pepper


1. Place avocado into a medium bowl and mash using the back of a fork or potato masher.

2. Add chopped tomatoes, spring onions, garlic, lime juice, olive oil, sea salt and black pepper.

3. Mix well

4. Finish with chilli and coriander

Enjoy your Glorious Guacamole with raw vegetables – carrot sticks, celery, cucumber, radishes are all great choice – for a healthy snack or as a topping on salads for satisfying meal. I also LOVE using guacamole as a side with Chilli Con Cane.
