SPICY NUT MIX


These delicious spicy mixed nuts are packed with fibre and healthy fats to keep you full and satisfied and are ideal for stashing in your handbag for a healthy snack.

Ingredients

1tsp chilli powder

1tsp smoked paprika

3/4tsp ground cumin

1/2tsp cayenne pepper (optional)

3/4cup pecans or cashews

3/4cup raw almonds

1/2cup raw pistachios

2tbsp olive oil

1/2tsp coarse sea salt

Method

1.Preheat oven to 160 degrees C

2.Mix the spices in a small bowl and set aside

3.Spread the nuts on a large baking sheet and roast for about 8-10 minutes

4.Remove to a bowl and toss with the olive oil

5.Add the spices and stir briefly

6.Transfer to the baking sheet and roast for another 2-3 minutes

7.A snack portion is a big tablespoon of spicy nuts
